Crispy "Cheesy" Kale Chips

These crispy kale chips are coated with olive oil and a savory blend of nutritional yeast, sunflower seeds, and seasonings for a cheesy flavor without dairy. They're an easy, crunchy snack that's packed with nutrients and a delicious way to enjoy fresh kale.

Ingredients

  • 4 cups of kale
  • 1 Tbsp olive oil or another oil
  • ⅕ cup cashews (optional)
  • 1 Tbsp sunflower seeds
  • 2 ½ Tbsp nutritional yeast
  • Salt & Pepper (to taste)
  • Dash of cayenne pepper (optional)

Directions

  1. Preheat the oven to 300 F. Mix the kale and oil in a large bowl. Use your hands to massage oil into the kale.
  2. Add cashews, sunflower seeds, 1 ½ Tbsp nutritional yeast, salt, pepper, and cayenne pepper (optional) into the blender or food processor until it is a fine meal consistency.
  3. Work the spice mixture into the kale. Place kale on a baking sheet (not overlapping).
  4. Add the remaining 1 Tbsp of nutritional yeast to the kale. Bake for 15 minutes, flip the kale, and return to the oven for an additional 5 minutes. Enjoy!
  5. You can place leftover kale in a sealed container or a zipped bag for 2-3 days.

SHOPPING TIP: Nutritional yeast is often found near baking supplies, health foods, or spices. If you can't find it, ask a store employee for help. Still can’t find it? No problem! The recipe can still be made without it. The kale chips will be less cheesy but still delicious. Try everything bagel seasoning or your favorite seasoning.
